滄 海 遺 白
紅酒不知何時成為了葡萄酒的同義詞。亞洲人重紅輕白原因也許是傳統都覺得紅酒補血、而白葡萄酒則是生冷之物。如果以香港大部份人都有富貴病、亦即三高；理論上白葡萄酒應該更受歡迎，應為白葡萄酒中的天然酸性是降膽固醇的恩物。
白葡萄酒的世界一直被莎當妮雄霸，只有長相思能夠為廣大酒友記取。其實白葡萄品種是多姿多彩，論高香、高貴、高雅，維歐尼絕對可以比肩莎當妮。
人們喜歡法國勃艮第的莎當妮就是因為那天然的botrytis菌有着花生油一般的香氣。尤其是望廈山區；其實隆尼河北部康雀兒的維歐尼，論香、稠、醇都不遑多讓。
很神奇維歐尼只要離開了康雀兒地區，那份嚴謹的結構都變得支離破碎。然而那份高香卻不減。沒法子啊！康雀兒種植為歐尼葡萄有二千年以上的歷史、然而在1980年之前全球種植為歐利葡萄只有32公頃。感謝葡萄酒大擘珍茜斯羅便臣小姐的極力推廣，現在法國以外都有莊園種植維歐尼葡萄。才四十年的經驗年資，各地區還需要些時日來提升種植和釀製維歐尼的技術喔！
在我嚐過的法國以外的維歐尼白葡萄酒，要數意大利皮埃蒙特的卡聶索釀得最精彩！高香、濃郁、滋味紛陳；山楂花、金銀花、麝香花、白桃、杏子、菠蘿 、蘋果、啤梨、雲呢拿 、丁香 ……而且耐於咀嚼，越透氣越精彩，真的是法國以外不可多得的佳作。價錢友善！ 年產量只有兩千餘瓶，萬勿錯過！
The Forgotten Whites
I don’t know when red wine became synonymous with wine in Chinese. The reason why Asians value red wine over white wine may be due to the traditional belief that red wine nourishes the blood, while white wine is a cold drink which is less nutritious. If most people in Hong Kong suffer from the disease of affluence, that is, the three highs, theoretically white wine should be more popular because the natural acidity in white wine is a boon for lowering cholesterol.
The world of white wine has always been dominated by Chardonnay, and only Sauvignon Blanc is remembered by most wine lovers. In fact, there are many varieties of white grapes. In terms of fragrance, nobility, and elegance, Viognier can definitely rival Chardonnay.
People like French Chardonnay from Burgundy because the natural botrytis has a peanut oil-like aroma. Especially in the Montrachet region; in fact, the Viognier from Condrieu in the Northern Rhone is not far behind in terms of fragrance, consistency and concentration.
It is amazing that as soon as Viognier leaves the Condrieu area, the rigorous structure becomes fragmented. However, the high fragrance has not diminished. There is nothing we can do! Condrieu has been cultivating as Viognier grape for more than 2,000 years. However, before 1980, there were only 32 hectares of Viognier planted in the entire planet. Thanks to the vigorous promotion of wine guru Ms. Jancis Robinson, Viognier grapes are now grown in estates outside of France. With only 40 years of experience, various regions still need some time to improve their techniques for growing and vinifying Viognier!
Among the Viogniers outside of France that I have tasted, Calypsos from Piedmont in Italy is the most exciting! Highly fragrant, rich, and full of flavours; May flower, honeysuckle, musk , white peach, apricot, pineapple, apple, pear, vanilla, clove... And it is chewy, and the more breathable the more exciting it is. It is really an unique and rare masterpiece outside France . The price is friendly! The annual output is only around 2,000 bottles, so don’t miss it!
