古樹新茶工作坊
感謝各位茶粉絲過往的支持。還記得《在約會一萬二千年》的活動中，有來賓覺得：沒有客觀的尺度來衡量古樹的年齡。怎樣判斷古樹的年齡？心裡很不踏實。
其實古樹茶也有認證的。我們所知官方認證的古茶樹，最老3200年。仍然生存在雲南鳳慶。可惜輪不到我們喝。
鳳慶以外，還有這麼古老的樹嗎？有的！也有茶農獲得官方認證，並且註冊了座標。但是，一有官方認證超過1000年的古樹，價錢每斤動輒以萬起跳。
也有好些“滄海遺珠”不願做認證。因為税會很重，而且樹大招風。新貴們圈地的有之、包攬樹群的有之。一些老實的茶農都不願被承包。因為過度的採摘，一來傷地力、二來也傷古樹。大批遊客來了環境也被污染，這不是茶農的福祉。
一般的茶客怎樣去判斷古樹的老齡？沒辦法，唯有靠經驗和運氣；視乎有沒有一位老實的供應商，提供貨真價實的產品和資料，喝過好茶才有基準判斷。交了這麼多年的學費，我悟出了一個心得和大家分享。老樹茶果膠特別重；要憑口感去判斷茶有多老。當然也可以搜集資料，研究每一個地區掌故歷史，而推敲出古樹的年齡，來印證口感的判斷。

Ancient Arbor Young Tea Workshop
I am grateful to my tea fans for their continues support. I still remember that at the "Dating for 12,000 Years" event, some guests felt that there was no objective scale to measure the age of ancient trees. They felt uneasy as they had no ideas of how to judge the age of ancient Arbor.
In fact, ancient tea tree is can be certified. The oldest officially certified ancient tea tree we know of is 3,200 years old. Still living in Fengqing, Yunnan. It's a pity that it's not our turn to drink.
Are there such ancient trees outside Fengqing? some! There are also tea farmers who have obtained official certification and registered coordinates. However, once an ancient tree is officially certified to be over 1,000 years old, the price can easily rise to tens of thousands per catty .
There are also many "hidden gems" that are unwilling to undergo certification. It is because the tax will be heavy, and it will be a bit ostentatious. Some of the nouveau riche are enclosing land and some are taking over groups of trees. Some modest and honest tea farmers are unwilling to be contracted. Excessive harvest damages the soil and the ancient trees. When a large number of tourists come, the environment is polluted, which is not the welfare of tea farmers.
How do general tea drinkers judge the age of ancient trees? There is no way, we can only rely on experience and luck; it depends on whether there is an honest supplier that provides genuine products and information, and only after drinking good tea can we have a baseline judgment. After learning so many lessons for so many years, I have learned something that I would like to share with you. Old tree tea has particularly heavy pectin; you have to judge how old the tea is by its mouth feel. Of course, you can also collect information, study the history of each region, and deduce the age of the ancient trees to confirm the taste judgment.

Each tea is precious. There are Dong Guo Mo Lie Pu'er, which is highly sought after by contemporary collectors, and Changning Dian Black tea, one of the three most famous reds.
