Ultimate Champagne
If Dom Perignon comes to your mind when you think of Champagne, most likely, you belong to the James Bond era.
I always wonder why Grower Champagne has been very fashionable in U.S. and Japan for decades, yet HK is still clinging to blended commercial brands without clues of where the grapes come from and not to mention the character of terroir.
To appreciate RM (Grower made) Champagne, we like the unique taste reflecting the micro climate of the land, of course, the craftsmanship of the maker. They are normally from small plot of land and small family producer and better value for money.
It does not mean that they are of low price. Ten years ago, when most drinkers of the James Bond era are still clinging to commercial big names, our Queen of Gossip Teresa Cheung Siu Wai brought the message from Beverly Hill that the entire celebrity circle in Hollywood use Champagne Salon to entertain guests, while she was the Executive Producer of Oliver Stone’s movie. Indeed Champagne Salon becomes big blue chips these days because of its uniqueness: single vinyard, Grand Cru Le Mesnil Sur Oger, Blanc de Blancs, very seriously crafted, well-aged for at least 10 years before releasing, not blended to reflect the whole truth of terroir.
For the second most famous RM Champagne, I shall consider Champagne Jacques Selosse. It is a Grand cru from Avize, adapting the pains-taking Solara System. It becomes very much sought after these days.

終極香檳
如果一說到香檳您就想到Dom Perignon, 那您應該屬於占士邦年代了。
我一直不明白為什麼小農香檳在美國日本流行了數十年，香港飲家對不知葡萄出處、更遑論風土特性的商業化勾兌式香檳一直忠貞不渝。
欣賞RM （ 小農製造）香檳是欣賞她能完全反映特有的微型氣候和風土， 當然還有釀酒師的匠心獨運。一般只有小家庭的規模生產而且性價比較高。
但是這不等於他們便宜。十年前當占士邦年代飲家還擁抱著商業化名牌時，我們的緋聞女神章小蕙，當時她是荷李活大導奧利華史東的監製，從比華利山帶來了訊息：整個荷李活的名人圈都用Champagne Salon 來款待嘉賓。這見於鄭大班訪問章小蕙YouTube視頻。
事實上Salon最近成為大藍籌，她的獨特來自於單一莊園， 不經勾兌、特級產區le Mesnil Sur Oger 村、精雕細琢、沈澱十年才出窖，不增不減，完完全全反映風土的真貌。
論第二出名的小農香檳，我想應該數Jacques Selosse; 來自特級產區Avize村、採用十分費工夫的Solera System。最近成為飲家追捧的對象。
