這十數年來最寶貴的得著,是跟康帝的高足:雅歷斯.基斯頓戚,學到了釀製和勾兌好酒的知識,還有酒食配的技巧。其中一個金科玉律是天然的美酒,配天然的好食材,絕對錯不了;不論是紅肉白肉和紅酒白酒。 

雅歷斯說:論包容力,天下沒有比。大地母親更具包容力的了!你扔一堆垃圾在地上,她也會給你長出花兒。天然的美酒和天然的食材永不衝突,有了他的點撥,我大膽的酒食配嚇死了很多侍酒師和酒客。有時看着他們嘴裏嘀嘀咕咕一肚子狐疑,結果酒還是一滴不剩、菜還是美人照鏡。看著他們的表情都不禁自鳴得意。 

我又從夏維雅威農身上學到,碘質重的海鮮,一般的白酒不能應付;要嗎?就用酒體極豐厚的極霸道的繆索,甚至乎要用上紅酒。例如法國蠔、或者沒有魚鱗的魚類。 

這種顛覆性的酒食配理論,帶給我無限的驚喜。 

有幸發掘到烏魚子的天花板;一位意大利撒丁島的老漁夫。一艘小船作業,全手工純天然;即捕即宰,鮮味無窮。吃遍中外各地的烏魚子,沒有一個品牌及上這家的放血工夫,烏魚子毫無腥味。我用寶祖麗紅酒配,媽媽咪呀⋯⋯!甜美的嘉美葡萄抵消了碘的苦澀,鮮味則淋灕盡至地勾勒出來!味道如同品嚐法國吉拉多生蠔! 

三字記之曰:鮮、妙、正!

I have always insisted on selling biodynamic wines, which will neither make me a fortune nor starve me to death; my humble wish is that introducing good wine to the general public who can also enjoy real natural wines at affordable price. Wine is indeed a gift from God. You don’t need to be a Master of Wine nor spend crazy money to enjoy real, nice wine. You just need to trust your taste buds and search carefully. Just like you patiently browse in the  outlet store you can also find good fashion with the brand cut off. Although you laugh at me for being poor and romantic, I enjoy it. 

The most valuable attainment I got from insisting on bio wine is the food and wine pairing skill I learned from the disciple of DRC, Ales Kristancic. One of the golden rules is that natural wines and natural good ingredients always match, whether it is red meat or white meat or red wine or white wine. 

Ales said: When it comes to inclusiveness, nothing is more accommodating than Mother Earth. If you dump garbage on the ground, she will also grow flowers for you. Natural wine and natural ingredients never conflict. With his advice, my bold food-wine pairings scared many sommeliers and drinkers. Sometimes I watched them muttering doubts, but in the end, both wine glasses and plates were emptied. Looking at their expressions, I couldn't help but feel proud. 

I also learned from Xavier Vignon that seafood with heavy iodine cannot be handled by ordinary white wine. It should be paired with extremely rich and domineering Muersualt, or even red wine. For example, French oysters, or fish without scales. 

This subversive food-wine pairing theory brings me endless surprises. 

I was fortunate to discover the ceiling of mullet roe, an old fisherman from Sardinia, Italy. He works on a small boat, all handmade and natural; he catches and slaughters immediately, and the mullet roe is endlessly savouring. I have eaten mullet roe from all over China and abroad, and no brand can match the bleeding process of this one, and the mullet roe has no fishy smell at all. I use Beaujolais red wine to pair it, my God...! The sweet Gamay grapes offset the bitterness of iodine, and the umami flavor is fully outlined! The taste is like tasting French Gillardeau and Belon oyster. 

The feeling is simply: Umami, wonderful, Scrumptious! 

Such pairing is so good that it is so easy to finish whole bottle of wine alone. It is definitely a good companion for watching dramas and movies! Do you want to try it?
