
驚艶昌寧紅
很奇怪,儘管紅茶的發祥地是在武夷山的星村,但中國三大名紅之中卻沒有納入正山小種。而是概括了川、祁、滇。
遺憾沒有遇過優質的川紅,興許是四川人那麼愛享受,本銷也不夠,很難有出口。祁紅越來越貴了,買貢品真有點肉赤。剛開始發燒玩中國茶時,未曾發現滇紅的奧妙,市面的滇紅都是商業化的凡品。
喜歡祁門紅的細膩、精緻、高貴。她的玫瑰香味,像大馬士革的玫魂,精緻而神祕;堅果香像意大利都靈市馳名榛子巧克力。遇上昌寧紅茶,沒有神魂顛倒𨚫只有膜拜!她除了有玫瑰香之外,還給你雞蛋花、黃玉蘭、龍眼花……有很多說不出的花香。昌寜的玫瑰香,正是雲南玫瑰獨有的香;內涵豐富而不濃烈、平易近人得來讓你有種越聞越舒服、越放鬆的感覺。還有各種的水果味。
鐵粉們有留意的話,不難發覺我已蒐集過四百年、五百年、一千年、千五年的不同年份昌寧的古樹紅茶。一旦戀上古樹,很難再變心。古樹茶水感的濃稠和膠質,是台地灌木茶無法比較的。
剛出窖的昌寕紅,熱泡的技巧很講究。攝氏一百度的沸騰水開茶,傾出茶湯之後任由他透氣3小時。3小時後再用85度的水沖第二泡,香味才得以盡量發揮。

最近我這個乞兒身王帝咀的尖咀繆,發現了一處山旮旯的小村,出了一手二百年野生古樹昌寧紅。冷泡效果簡直震撼!玫瑰不在話下,那黃玉蘭香簡直是像三十二度陽光下,黃玉蘭被曬到花瓣邊開始有點兒焦的氣味。果香簡直是包羅萬有:荔枝、龍眼、紅毛丹、山楂、野草莓,冷泡第二泡之後還給你薄荷味。看看他的價錢,簡直抵買到冇朋友! 頭春的產量很少,只有20公斤。我的配額是兩公斤。手快有!
Amazing Changning Black
It is strange that although the birthplace of black tea is Star Village in Wuyi Mountain, Zhengshan Xiaozhong is not included in the three famous black teas in China. Instead, it includes Sichuan, Qi Men (Anhui) and Yunnan.
It is a pity that I have never encountered high-quality Sichuan black tea. Perhaps it is because Sichuan people love to enjoy it so much, and supply is not big enough for local consumption, so it is difficult to export it. Imperial grade Qi Men Black tea is getting more and more expensive and unaffordable. When I first started to collect Chinese tea, I had not discovered the mystery of Yunnan Black tea. Yunnan black tea on the market at that time was all commercialised.
I like the delicate, exquisite and noble Qimen black tea. Its rose fragrance is like the rose soul of Damascus, exquisite and mysterious; the nutty fragrance is like the famous hazelnut chocolate in Turin, Italy. When I meet Changning black tea, I am not fascinated, but worship it! In addition to the rose fragrance, it also gives you frangipani, yellow magnolia, longan flower... There are many unspeakable floral notes. The rose fragrance of Changning is the unique fragrance of Yunnan roses; it is rich in connotation but not punching, and it is approachable, making you feel more comfortable and relaxed the more you smell it. There are also various fruit flavors.
If you are my regular reader, you may find that I have collected ancient tree black teas from Changning in different vintages of tree age 400, 500, 1,000, and 1,500 years. Once you fall in love with ancient arbor, it is difficult to go back. The thickness and concentration of ancient tree tea are incomparable to the terrace shrub tea.
The technique of hot brewing Changning black just out of the cellar is very particular. First brew the tea with boiling water at 100 degrees Celsius, drain the tea soup and let it breathe for 3 hours. After 3 hours, use 85-degree water to brew the second infusion so that the fragrance can be maximized.
Thanks to Chef Zhang Jiayu, the chef of China Tang, who inspired me to make cold brew Changning black. The effect is amazing!
Recently, picky me discovered a small village in no where that produces 200-year-old wild Changning Changning. The cold brew effect is simply amazing! Rose , needless to tell, and the yellow magnolia fragrance is just like the smell of petals being crustillante under the sun at 32 degrees. The fruity aroma is simply all-encompassing: lychee, longan, rambutan, hawthorn, wild strawberry, and after the second cold brew, it will give you a minty taste. Look at its price, it is simply worth buying! The production of the first flush is very small, only 20 kilograms. My quota is two kilograms. Hurry up and get it!
