這個桃紅不太淡 泰富再生花
剛出道的時候，葡萄酒知識膚淺，只會跟老前輩念口簧，＂耗死蕩輸唔等得、泰富耗死可以陳＂。其實是Rose D'Anjou 和Tavel Rose 的通勝法文音譯。
那時傻乎乎的我跟一般人一樣，以為白葡萄釀白酒丶紅葡萄釀紅酒，桃紅酒就是紅酒混白酒。
其實桃紅酒如果是法國的AOC級，是不允許紅混白的，但香檳區除外。Rose D'Anjou產自盧瓦河，主要用品麗珠丶赤霞珠和嘉美葡萄釀製。必須嫩齡冰鎮。
Tavel Rose主打葡萄是施赫、格納殊、珊索丶慕維特。經較長時間浸泡而成耀目的寶石紅。可想而知必然比Rose D‘Anjou 醇厚。曾幾何時，她是教皇丶法皇菲獵四世丶路易十四和海明威的至愛。遺憾60年代的芽蟲病災差不多令此區全軍盡墨。災後為了快收成，農戶選同區砂質地種植，風彩大不如前。我出道時喝80年代的，只覺得是中庸之姿。
事別四十年，御林騎酒莊靠教皇新堡區的大白石板地的Tavel葡萄園，再生的葡萄藤也五十多歲，那份深遂丶內涵丶礦物丶嚼頭非一般桃紅可比。紅果子味夾點橘子香，無比平衡，味道層層叠叠丶氣象萬千。每次想觀察久一點看看她的終極演繹，都被酒腳們搶韁。今個週末決定獨飲樂。

備註： 生物動力學葡萄酒，採用原生本地酵母發酵，香味持久。開瓶後喝不完可以用原瓶栓封瓶，一個月內仍有香氣。切勿抽真空，也不必注入氮氣。
Rose Reborn
When I first joined the wine trade, my knowledge of wine was superficial, and I memorised seniors teachings to remember the two different roses of France that Anjou must drink fast and Tavel could be aged.
At that time, I was stupid like a lament, thinking that white grapes make white wine, red grapes make red wine, and rosé wine is red wine mixed with white wine.
In fact, if the rosé wine is AOC grade in France, red and white mixed are not allowed, except in the Champagne area. Rose D'Anjou is produced in the Loire River, and is mainly made from Cabernet Franc, Cabernet Sauvignon and Gamay grapes. It must be served young and chilled.
Tavel Rose's main grapes are Syrah, Grenache, Cinsault, and Mouverde. After maceration for a long time, it becomes a dazzling ruby colour. It is conceivable that it must be thicker than Rose D’Anjou. Tavel Rose used to be the favorite wine of the Pope, the French Emperor Philip IV, Louis XIV and Hemingway. Regrettably, the phylloxera in the 1960s almost wiped out the entire region. In order to quickly harvest after the disaster, farmers chose the same area for planting on sandy soil, which was not as good as before. I drank it from the 80s and I just thought it was a modest attitude.

Forty years have gone, those regenerated vines are now over 50 years old from the Domaines Des Carabiniers’ Tavel vineyard with big white boulder on the top soil adjacent to the Chateauneuf du Pape region. She is rich, connotative, mineral and chewy that general rose wine cannot compare. The red fruits with citrus scent is very balanced, and the flavor is layered and capricious. Every time I wanted to observe her for a longer time to see her ultimate evolvement, I was snatched by the my wine buddies. I decided to drink alone this weekend.
What else can you ask for with the price of peanuts, pleasure of a King and it is registered with the highest standard biodynamic Demeter. From now on if someone tells you that Rosé is a woman's wine, so you can challenge him if he has Hemingway's talent.
Remarks: Biodynamic wines are fermented with native indigenous yeast, with long-lasting aroma. After opening, if you can't finish drinking it, you can seal the bottle with the original cork, and the fragrance will remain within one month. Do not draw a vacuum or inject nitrogen.
