中國茶藝的博大精深,敢說是沒有任何國家可以匹敵。地域之廣、工藝之複雜、風格之多變、窮一輩子也未必能夠嚐盡。

中國茶的分類,主要是按地域、發酵程度、和茶樹的品種。茶樹的品種國際有正式記載有六百多種,數字還在增長中。簡單的可以分喬木中和灌木種,亦即大葉和小葉。也有分台地和古樹。

臺地茶泛指人工種植的小葉灌木。古樹茶是指一百年以上的喬木大葉茶。兩種茶的風格大異其趣。我們在市面上能購買和和喝到多數是台地茶。

江城位於普洱縣,怒江、瀾滄江、金沙江三江匯流、種茶歷史久遠的哈尼族彞族區。以產喬木老樹茶見稱。香氣如淡青樟木、荷花、紅棗。茶氣中等溫和。十泡有餘香。

雲南保山二百年野生古樹滇紅2025 春茶
來自雲南保山區昌寧的二百年原生喬木古樹。2025是一個大熱年,茶葉特別濃縮,蜜香明顯。儲藏得宜,估計蜜香可以維持3年。
現時冷泡效果更理想。玫瑰、黃玉蘭、百花蜜的香氣貫徹始終。長時間浸泡會釋出梅子和薄荷香氣。

A First Look at Ancient Arbor Tea


The profound and extensive nature of Chinese tea art is arguably unmatched by any other country. Its vast geographical reach, complex processing techniques, and diverse styles mean that even a lifetime's worth of tea tastings might not be exhaustive.

Chinese tea is primarily classified by region, degree of fermentation, and tea tree variety. There are over 600 officially recorded tea tree varieties internationally, and this number continues to grow. A simple classification is between arbor and shrub varieties, i.e., large-leaf and small-leaf. It is also categorized as terrace tea and ancient arbor tea.

Terraced tea generally refers to artificially cultivated small-leaf shrub tea. Ancient tree tea refers to large-leaf tea from arbor trees over 100 years old. The two types of tea have vastly different styles. Most of the tea we buy and drink in the market is terrace tea.

To allow tea enthusiasts to gain a deeper understanding of the beauty of ancient arbor tea, Tina Cellar and Cordis Hotel Ming Court are hosting a Yunnan Ancient Arbor Tea Tasting Workshop. This workshop will provide an in-depth experience and appreciation of the joys of ancient tree white tea, black tea, and dark tea. Savor rare ancient tree tea while enjoying meticulously prepared tea snacks by Executive Chef Li Yat Fatt of Ming Court. Enjoy a leisurely afternoon.

The teas selected for this event are all produced by small farmers, with extremely limited production. The craftsmanship is exquisite and meticulous, not to be missed. Seating is limited, so book early.

Xishuangbanna Ancient Arbor White Tea 2025
2025 Xishuangbanna Ancient Arbor White Tea typically refers to white tea harvested in the spring of 2025 from high-altitude ancient tea trees in the Xishuangbanna region (such as Menghai Nanben and Yiwu). It is characterized by its floral honey aroma and mellow, sweet, and smooth taste.

Yunnan Molie Pu'er Single Tree Raw Cake 2023
 From the Molie production area of Lincang, Yunnan, this is a Pu'er raw tea cake made in 2023 from single ancient tree tea leaves.

This type of tea is popular among tea lovers for its unique mountain flavor and the "qi" (vitality and strength) of tea grown at high altitudes. It is characterized by its rich aroma and complex flavor profile.

Jiangcheng Daye Old Tree Pu'er Loose Raw Tea 1990
Jiangcheng is located in Pu'er County, at the confluence of the Nujiang, Lancang, and Jinsha Rivers, a Hani and Yi ethnic minority area with a long history of tea cultivation. It is known for its old arbor tea trees. The aroma is reminiscent of light camphor wood, lotus, and red dates. The tea's flavor is moderately mild. It retains its fragrance even after ten infusions.

2025 Spring Tea from 200-Year-Old Wild Ancient Tree Dianhong Tea from Baoshan, Yunnan
From a 200-year-old native arbor tree in Changning, Baoshan District, Yunnan. 2025 was a very hot year, resulting in particularly concentrated tea leaves with a pronounced honey aroma. With proper storage, the honey aroma is estimated to last for 3 years.

Currently, cold brewing yields the best results. Aromas of rose, magnolia, and wildflower honey permeate the entire brew. Longer steeping releases plum and mint aromas.
