綠茶遊神州

香港茶友們平日到茶樓常喝鐵觀音、普洱或香片，殊不知中國產量最高的茶類，其實是綠茶。從江南水鄉到西南高山，大江南北都有各具風土特色的綠茶：有的清香鮮爽，有的帶嫩豆香與花果香，有的滋味醇厚、回甘悠長。

綠茶看似簡單，卻最講究鮮葉品質、採摘時節與製茶工藝。這次9月12日茶宴，我們搜集了多款極具代表性的優質綠茶，包括明前獅峰龍井、洞庭碧螺春、蝙蝠洞六安瓜片及蒙頂甘露，並配以明閣大廚李日發師傅精心設計的菜式。

Around China with Green Tea

Hong Kong Tea Fans are familiar with Tieguanyin, Pu’er and jasmine tea, yet few realize that green tea is the most widely produced category of tea in China. From the waterways of Jiangnan to the mountains of southwestern China, green tea is made across the country, with each region expressing its own distinctive character—from fresh vegetal and delicate floral notes to rich aromas and lingering sweetness.
Although green tea may appear simple, its quality depends greatly on the freshness of the leaves, the harvesting season, and the craftsmanship involved in its production.
For our tea banquet on 12 September, we have selected four iconic Chinese green teas: Hangzhou West
Lake Pre-Ching Ming Lion Peak Long Jing, Anhui Dong Ting Bi Luo Chun, Anhui Bat Dan Liu’An Gua Pian, and
Sichuan Mengding Dew Drops, paired with heartily crafted dishes by Executive Chef Chef Lee Yatt Fat of the Ming Court.
