沙龍香檳
上一個世紀，銘悅旗下的當.派瑞安香檳是泡妞必備酒的同義詞。他在不同的大電影亮過相；鐵金剛勇破海底城，還有世紀帥男尊龍主演的龍年。用勞斯萊司來比肩的香檳有庫克；他太高不可攀所以很少出現在電影。而當下竄紅最神速的香檳要數積克.薩魯斯和沙龍香檳。薩魯斯我從市價港幣一千多，到如今四千八百；幸虧喝得早！而神奇沙龍則從十年前港幣兩千多，變成如今全球市場均價一萬二千多；升勢還沒有放緩的跡象，誰比他更神奇？
這三款高高在上的香檳都有一個共同點，葡萄都是來自白河谷的特級村，其中鷗雪溪和鷗雪溪畔的岷倪出產的莎當妮，更是特級村中的佼佼者。白河谷是黃金河的分支，擁有十七條特級村，鷗雪江的岷倪位處最南部，得天獨厚；較暖的氣候，葡萄凝霜的風險偏低，不需要採青，熟透的葡萄釀出來的汽酒，果香濃郁。岷倪還有一個獨特的個性；香檳都有一股五穀香，猶如麥香。因此，很多人形容為克力架或者法國軟包。而岷倪的麥香，如同我們的淮小麥。
除了本身優越的地理條件，使沙龍香檳竄紅神速的，少不了酒評人吹捧，還多得赫赫有名的洛克菲臘家族。據說他們家的指定宴客香檳就是沙龍香檳。我們的緋聞女神章小蕙在鄭大班的訪問中提及過洛克菲臘家用這香檳款待她呢！
庫克、薩魯斯、沙龍這白河谷三傑，各有千秋。庫克是豐滿誘人、多姿多彩，身段如烏蘇拉.安德斯。薩魯斯含阿維斯村葡萄成分較高，端莊清秀，玲瓏滴翠，苗條如韋尼侯斯敦。怎麼形容沙龍香檳，確實是一個挑戰。很多人喝過沙龍，都覺得名過其實。這點我不敢苟同。沙龍像我們的鮑魚，煮不夠火候，會像橡皮擦，乏味也難嚼。如果夠耐性，讓她熟成，則是完全不同的境界；就如鮮鮑刺身和紅燒舊水乾鮑的分別。越精緻細膩的味道，越是需要細味嘴嚼。越富有越愛財；畢竟世代巨賈如洛克菲臘準不會扔錢入海吧！如果要找一個人去形容沙龍香檳，塵世中真得想不出誰，她像高陽筆下的董小宛，驟眼看平平無奇，算個眉清目秀吧，可是覺越看越有味道，越看越不想把目光抽離。唯一近似的美人，我想應該是吳倩蓮。
人一世物一世，不管佳節也好、佳人也好、總少不了佳釀。大破慳囊嚐一瓶又何妨？

Champagne Salon
In the last century, Dom Perignon Champagne was synonymous with the must-have wine for picking up girls. It has appeared in different major movies; James Bond Thunderball, and Year of the Dragon starring the handsome man of the century John Lone. The Champagne rivaled by Rolls-Royce is Krug; it is so unattainable that it rarely appears in movies. The most sought after Champagnes at the moment are Jacques Selosses and Salon. The market price of Selosses has increased from more than 1,000 Hong Kong dollars to 4,800 Hong Kong dollars now. Fortunately, I drank it early! The magic Salon has gone from more than HK$2,000 ten years ago to more than 12,000 Hong Kong dollars today. The upward trend shows no sign of slowing down. Who is more magical than it?
These three high-end champagnes all have one thing in common. The grapes are all from Chardonnay on the Grand Cru Village of the Cote de Blanc. Cote de Blanc is a branch of the Cote D’Or and has 17 Grand Crus. Oger and Les Mesnil Sur Oger are located in the southernmost part and is uniquely endowed with a warm climate. The risk of grape frost is low, and there is no need to harvest green and the wine is made with grapes with perfect ripeness. The sparkling wine that comes out has a fruity aroma. Oger and les Mesnil Sur Oger both have a unique personality; they both have got the aroma of grains, like the aroma of wheat. Therefore, many people describe it as a Jacob’s Cracker or a French brioche. The fragrance of Mesnil Chardonnay is as subtle as Chinese wheat form River Huai.
In addition to its superior geographical conditions, what makes Salon Champagne so popular is the praise of wine critics and the famous Rockefeller family. It is said that their designated banquet champagne is Salon Champagne. Our gossip goddess Zhang Xiaohui mentioned in Tai Pan Zheng ‘s interview that the Rockefeller family entertained her with this champagne!
Krug, Selosses and Salon are three outstanding figures, each with their own merits. Krug was plump, seductive, colorful, with the figure of Ursula Anders. Selosses with higher percentage of grapes from Avize is pleasant and fresh, exquisite and emerald, and slender like Whitney Houston. How to describe Salon is indeed a challenge. Many people who have tried Salon feel that it is over-the-top. I beg to differ on this point. Salon is like our abalone. If it is not cooked well enough, it will be like rubber, bland and difficult to chew. If you are patient enough and let it mature, it will be a completely different realm; just like the difference between fresh abalone sashimi and braised aged dried - abalone. The more delicate the taste, the more you need to chew it carefully. The richer one is, the more one loves money; after all, wealthy businessmen such as Rockefeller would not throw money into the sea! If you want to find someone to describe Salon Champagne, I really can’t think of anyone in this world. May be Queen Nefertiti in ancient Egypt? At first glance, she looks ordinary and pretty, but the more one looks at her, the more interesting she becomes and cannot take one’s eyes off. The only similar beauty in the real world, I think, perhaps, Carrie -Anne Moss in the Chocolate and The Matrix ?
Life is too short for the second best. A nice bottle of Champagne is an essential element for either good moment with beautiful friends.
